Recipe for the spicy seitan loaf (I have no idea how to call it, to be honest). It's a cross between "Barbecued Ribz" and "Pastrami-Style Seitan Roast", both from Julie Hasson's "Vegan Diner" which Anne & I highly recommend.
- Dry phase: mix together in a big bowl 2 cups of wheat gluten powder, 1/4 cup nutritional yeast, 1/4 cup chickpea flour, and 1/4 cup of spices (I tend not to do the same everytime, I think the one I had was something like 2 tablespoons dried onion flakes, 1 tablespoon paprika, 2 teaspoons garlic powder and 1 teaspoon sea salt. Other herbs (origan) or whatever you fancy can replace the dried onion flakes. Experiment at will.)
- Wet phase: mix together 1 cup cool water and 1/4 cup peanut butter until smooth. Add 2 tablespoons hot pepper sauce, 1 tablespoon soy sauce and 1 tablespoon liquid smoke.
- Mix the wet preparation into the dry one, knead lightly to form a loaf. It's likely you'll need to add a bit of water, usually there's no dry powder sticking to the bowl, you're good.
- Wrap the loaf in a thin towel (the ones to make cheese, or so I heard, should be fine) and cook in steam for 45 minutes.
