Place the amount of flour you want to use for the pie in a mixing bowl (I use whole wheat but not the brown kind). I never measure but I guess 3-4 cups should do. Add a teaspoon of baking powder (pinch it to remove lumps), some sugar (about 1/4 or 1/3 the amount of flour), a pinch of salt, and a teaspoon of cinnamon. Mix everything well together with a spoon or spatula.
Add 2 small ripe bananas and mash them well in the mixture; try to squash as many lumps as possible. Perhaps blending them into a smoothie and then adding them could also work. Add some grated carrot (I use 1 big carrot, but it's safe to use more or less) and mix them well.
Then add 0-5 tablespoons of oil/melted butter; be careful not to add to much.
Taste the mixture to see if it needs more sugar or salt (be careful not to use too much).
Butter the pie form and place 1/2 or 2/3 of the dough on the bottom and sides. Then mix a couple of grated apples (with the skin removed) with the rest of the dough. I use 2 big apples grated roughly and 1 small apple cut in little blocks. You can eat the skin as a snack if you bought biological ones (of course you did!). Add some more cinnamon and taste again. Then put the rest of the dough in the pie.
You could save some dough before the apples are added and place it on top, but I always forget it and it's fine without. I add a tiny layer of sugar on top.
Place it in the oven at the temperature range needed for the baking powder (3 if you have a gasoven from 1-. After half an hour or so you can put it higher (7) to bake it off.
Optionally you can add walnuts, raisins, other vegetables such as courgette, or use different kinds of sugars/flours/oils. Or "No Egg" and vanilla instead of banana. |
